But it is the most popular in Japan and has survived as a Japanese food through various evolution. Initially, raw fish was salted and fermented for about a month. Then the rice was thrown away and the fish was eaten. At that time it was basically a good process of fish conservation. Through this process the Japanese met a huge demand for their protein.

During the Muromachi period (1333-1573) the Japanese loved to eat fish with rice.

Evolution of sushi

The next step in the evolution of sushi was this dish called namanare. It was the process of eating half-boiled fish before it smelled like rice. Instead of preserving fish, it became a new type of food for the Japanese to change their taste.

During the Edo period (1603-1868) the 3rd dimension of sushi evolved. It was called ‘Hayazushi’. This is a landmark change in taste. From this time on, vinegar and salt are added to rice and vegetables and dried foods are added to fish.

This type of sushi is very popular nowadays. However, the ingredients of the sushi vary according to the area and the preferences of the people, keeping the original cooking method.

When fast food culture became popular in Tokyo, the capital of Japan in the 19th century, nigiri sushi, a local dish, became popular among itinerant vendors.

It was a piece of cooked fish wrapped in boiled rice to be sold.

After the catastrophic earthquake in Japan in 1923, those vendors from Tokyo spread to other parts of Japan, and the sushi recipe spread throughout Japan and quickly gained popularity.

The type of sushi we see today is called nigiri zushi and its inventor is Hanaya Yohei (1799–1858).

This fun dish is made by combining not only fish but also meat, vegetables, mushrooms and other ingredients of the consumer’s choice inside the boiled rice.

It can be eaten by hand, spoon or chopstick.

This is the first indigenous fast food in Japan that could be easily eaten on the street, in the cinema or in any public place. At present, it is gaining popularity not only among the Japanese but also globally

According to a recent survey of 15,000 tourists visiting Japan, four out of every 10 tourists taste sushi. Sushi made from rice, vinegar and sea fish is served in the form of small biscuits. This shows how popular sushi is becoming day by day.
